What sets us apart is meticulous care and craftsmanship at every stage. We start with the finest fresh Irish organic salmon, carefully selected for its superior quality. Raised in pristine Atlantic waters with plenty of space to swim, our salmon develop firm, lean flesh with naturally lower fat levels. The perfect foundation for smoking.
Dry salting brings the salmon’s natural flavour to the fore while preserving its firm, buttery texture. Slowly smoked at low temperatures over sustainably sourced oak, each piece of fish develops a delicate smokiness, a vibrant orange hue, and a distinctly delicious taste. Unlike other producers, we never smoke from frozen, ensuring unrivalled freshness and quality.
